The blend of feta cheese and tomato brings a tangy and refreshing twist, while Kalamata olives, oregano, and capers add that Mediterranean-Greek charm to the rusks.

Minoan Longevity Rusks- Greek Savory Breakfast
Ingredients
- 8 barley rusks
- 2 small ripe tomatoes
- 50 g feta cheese
- 8 Kalamata olives
- 1 tsp capers
- some olive oil
- a pinch of dried oregano
Instructions
- Crumble the feta cheese and dice the rinsed tomato. That's all there is to it for the preparation!
- Arrange your rusks on a plate and drizzle each with a few drops of premium quality olive oil.
- Next, layer diced tomato, crumbled feta, 1-2 capers, and 1 olive on each rusk. Finish with a sprinkle of dried oregano.
- Prepare to be amazed by the incredible flavor of this effortless breakfast!

This savory breakfast also serves as a delightful side or snack option. While we used barley and olive oil rusks, any type of rusks you have at hand will do.
If fresh tomatoes aren’t available, canned diced tomatoes can be used as a substitute.
