This is our classic weekday breakfast choice and we are sure you will love it as much as we do. And because we love versatility, we always mix it up a little bit, according to what ingredients we have at home, so it never gets repetitive.

To prepare this delicious blue zones breakfast recipe, you will need 2 basic ingredients: some kefir and barley rusks.
Greeks have been consuming crispy rusks for centuries now, knowing they are great for the digestive system. Since my mom and I have started eating various types of rusks on a consistent basis, we have been able to say goodbye to any indigestion or stomach hyperacidity problems.
For this recipe we use our favorite mini-size carob barley rusks from Crete, but feel free to use any rusk you can find in your area, like : plain barley rusks, rye rusks, olive oil rusks -which are made of wheat and olive oil.
How to Make Blue Zones Breakfast in 2 Minutes
Ingredients
- 250 mL kefir or buttermilk
- 10-15 blueberries frozen OR fresh
- 1/2 tsp Corinthian raisins ,also known as currants or black raisins
- 4 tsp old fashioned oats ( rolled oats)
- 2 small barley rusks ( OR 1 large)
Instructions
- Break the rusks into smaller pieces and add into a bowl.
- Add oats and raisins.
- Add kefir to cover the rusks completely.
- Add blueberries.
- Consume immediately OR keep in the fridge for 10-20 minutes, so that the rusks can soak and soften

From time to time you can replace kefir with buttermilk.
Use any berries you have at home, fresh or frozen. Some delicious blueberry substitutes include: blackberries, raspberries, strawberries, cranberries, and cherries. We also like to add sliced banana or chopped figs – it tastes delicious!

Serving and Storing
If you like crunchier rusks, you can enjoy this breakfast immediately after combining all the ingredients. At home, we usually leave it to soak for about 10-20 minutes while we prepare for the day. However, if you want it to be completely soft, prepare it the night before and leave it in the fridge overnight.
