Tips & tricks for making this recipe
Feel free to experiment by adding even more healthy ingredients! This way you can maximize the taste and nutritional value.
Try adding some greek wild greens called ‘horta‘ that you have previously sauteed for a few minutes. These include: amaranth called vlita in Greek, chicory, dandelion called radiki in Greek, black mustard leaves, beet greens, Swiss chard, spinach, arugula.
Colorful bell-peppers, kalamata olives, some chia seeds, are great options too! You can also add a pinch of dried oregano, a spice that makes any dish taste even more Greek! But be sure to add a tiny quantity ( literally a pinch) as dried oregano has the tendency to become a bit bitter when cooked.
If you’re making this recipe as your brunch, you can even add some diced and sauteed artichokes, asparagus or zucchinis.
Make sure the pan is hot enough before adding the eggs. If you add the eggs too early, they may stick to the pan, and who would want that, right?
It is best to use a wooden spoon when mixing the eggs. Why wooden? To avoid scratches on your favorite pan.
The ultimate mastery of scrambled eggs is to get a fluffy egg that isn’t dry. To achieve this, we follow a simple trick: in the last few seconds, we turn off the heat completely, lift the pan off the counter, and continue stirring briskly until we get the perfect consistency. This keeps the eggs from becoming rubbery. In addition, we always fry eggs on low-medium heat, and never on high heat.
Eggs in blue zones diet- say yes in moderation
You can consume eggs approximately 3 times per week on a blue zones longevity diet.
Especially for people who don’t eat meat, eggs are considered one of the best meatless protein options available.
Greeks also eat eggs in moderation, especially the classic Greek tomato scramble called ‘strapatsada.‘ It is also common practice among Greeks to fry an egg and serve it with wild greens (horta) or a simple seasonal salad when they are short on time or want to avoid time-consuming cooking or simply eat a little less.
Another very important element to remember when following the blue zone nutrition model is to always use the highest quality ingredients when cooking. Therefore, whenever possible, try to use organic, pasture-raised eggs.

Pizza Flavored Scrambled Eggs Breakfast Recipe
Ingredients
- 20 cherry tomatoes- cut in halves
- 8 eggs
- 100 gr feta cheese cut into cubes
- 1 tbsp green onions-chopped
- 1 tbsp olive oil
- 1/2 a tsp of salt
- a pinch of freshly ground black pepper
Instructions
- Use a regular frying pan. Fry cherry tomatoes over low-medium heat without adding any oil until they release their juice
- Add oil and eggs. Stir with a wooden spoon until you get the consistency of scrambled eggs
- Add the salt and feta cheese. Give it a gentle stir to incorporate the feta
- Time to add green onions-leave some aside to garnish the dish
- Stir until feta cheese is partially melted
- Serve and sprinkle with a pinch of ground black pepper
