Ingredients:
- 250 gr chickpeas peeled and soaked overnight
- juice of 1 lemon
- 3 tsp of salt
- 4 tbsp olive oil
- 1,5 liters of water
- 2 tbsp finely chopped parsley
- 1 tsp dried oregano
How to Make BLUE ZONES Greek Chickpea Soup:
1.Let the chickpeas soak overnight for about 12 hours, placed in a large bowl and fully covered with cold water
2.Drain well and using a deep pot cover the chickpeas with fresh water and bring to boil without adding any seasoning
3.Boil until foam is created on the surface
4.Collect the foam until the water is completely clear
5.Now switch to medium-low heat and add the salt, the oregano and 3 tablespoons of olive oil
6.Leave the pot half-covered and turn the heat to low
7.Cook for 50-60 mins
8.If needed, add a bit of hot water while boiling
9.If needed, add a bit more salt
10.Squeeze the juice of 1 lemon
11.When the chickpeas are cooked remove from heat
12.Using a potato masher, mash the chickpeas until about 1/3 of the chickpeas become a creamy paste and the remaining 2/3 are whole
13.Just before serving sprinkle with a bit of freshly squeezed lemon juice, some freshly diced parsley, and some fresh olive oil
