Jump to RecipeTo prepare this delicious dinner, you will need 2 basic ingredients: green peas and artichokes. You can use both fresh and frozen – we usually use frozen because fresh artichokes in particular are very time consuming to clean, and ultimately it’s more economical to buy frozen.
Frozen vegetables retain all their nutrients, so this is another factor to consider when cooking.

Tips & tricks for making this recipe
We always buy delicious fresh tomatoes at the outdoor green market in Athens. It really makes a huge difference in taste! But if you don’t have time, it’s best to replace fresh and diced tomatoes with crushed tomatoes – these are usually available in paper packages or cans.
If using fresh peas and artichokes instead of frozen, add about 100ml more water
If you are cleaning fresh artichokes yourself, use only hearts.
Artichokes- refined yet ideal for simple dishes
Artichokes are often associated with gourmet cuisine. The truth is, however, that their unique flavor profile is best emphasized by minimalist, simple dishes.
So what to combine artichokes with? Ingredients like potatoes, carrots, peas, green beans, tomatoes and Mediterranean style spices like olive oil, lemon, dill, garlic.
In addition, artichokes are widely used to support liver function, as they increase bile secretion, lower cholesterol, and prevent fatty liver. This is definitely an ingredient worth including in your menu!

Greek Grandma’s Artichokes & Peas That Melt in Your Mouth!
Ingredients
- 6 tbsp olive oil
- 2 fresh tomatoes-diced OR 150 g crushed tomatoes
- 1 carrot- diced
- 1 clove of garlic-diced
- 250 g green peas- fresh or frozen
- 200 g artichoke hearts- fresh or frozen
- 200 mL of water
- A few stalks of fresh dill- chopped ( aim for about 3 tbsp chopped dill)
- 1 tsp of salt
- a pinch of freshly ground black pepper
- juice of 1/2 a lemon
Instructions
- Let's start by adding olive oil into a deep frying pan and turning the heat to medium
- Once the oil is hot add diced tomato and sauté for about 5 minutes, stirring from time to time
- Add diced carrot and sauté for 3 more minutes
- Now add the garlic and sauté for 1 minute, while stirring constantly
- Add green peas and combine well
- Time to add the artichokes-spread them evenly on top of the peas
- Add the water
- Season with chopped dill and salt
- Bring it to boil and cover the pan
- Switch the heat to low and simmer for 45 minutes
- If you prefer a thicker sauce, remember to uncover the pan during the last 10 minutes of cooking
- Serve sprinkled with some ground black pepper and drizzled with a few drops of freshly squeezed lemon juice and fresh olive oil

Serving and Storing
This delicious stew goes perfectly with boiled rice or freshly baked bread.
After preparing the artichokes, they should not be stored for more than 24 hours – due to the formation of bluish mold, which has harmful properties.
