Lentil soup is back! This time we’ve made it so simple and easy that it should be titled “The Ridiculously Simple Lentil Soup Recipe.” When we say anyone can make it, we really mean it. So, in case this is your first time cooking soup in general, just make this one. You cannot go wrong!
We used wholesome green lentils, and a classic Greek-style combo of flavors, no other than: garlic, red onion, olive oil, oregano. The ingredients are whole, simple and perfectly combined for longevity while still tasting amazing!
Plus, this soup is very inexpensive -(it will cost you only $4 for 2 super generous servings, which actually make 3 proper servings! ) and freezer friendly! Let’s get cooking, shall we?

Blue Zone Lentil Soup : Your Healthiest Recipe Yet!
Ingredients
- 250 g green lentils
- 4 tbsp olive oil
- 1 tsp dried oregano
- 2 tsp salt
- 2 laurel leaves ( bay leaves)
- 1 red onion -LEAVE WHOLE
- 2 cloves of garlic – LEAVE WHOLE
- 1/2 a bunch parsley- CHOPPED
- 1 L water
Instructions
- Rinse and finely chop the parsley. Peel the onion and garlic, and no need to dice them- leave them whole.
- Rinse the lentils thoroughly under running water and set them aside to drain.
- In a medium-sized pot, combine water and lentils.
- Add all the ingredients: whole onion, garlic, salt, bay leaves, half of the parsley, oregano, and 3 tablespoons of olive oil.
- Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes.
- Once cooked, sprinkle with the reserved parsley and drizzle with fresh olive oil before serving.
- Serve with fresh bread and feta cheese for a complete hearty meal. Enjoy!
